If the dough is very sticky, add more flour to form a stiffer dough that later rolls into sheets.
- Begin adding water little by a little while mixing the eggs and flour together with your hands until you have an evenly combined mixture. Do not add too much water at once or the eggs will separate from one another and the dough will be far too sticky to work with.
- Knead the mixture as you gradually add splashes of water until the dough is smooth and cohesive but not sticky or runny.
- Allow the fresh pasta to rest for 15 minutes before rolling it out into sheets and cutting it to desired shapes and sizes.
- Place the cut pasta shapes in boiling water and cook until al dente or firm but not crunchy.
- Drain the pasta and place it on a plate to cool until safe to eat. Optionally, mix the cooked pasta with sauce immediately after draining before serving for an even tastier dish!
- Place the plate of pasta in the microwave and cook it for 1-2 minutes, depending on how many pieces are being heated at once.
- Serve fresh homemade microwaved pasta immediately after microwaving!
